Pound Cake Bundt

This is my first bundt cake! To my surprise, it was easy to make. Usually, I’m not good with cakes, especially vanilla cakes. Chocolate cakes, now, those are easier… I made this cake because my family received one as a gift during the holidays… and I wanted to experiment with something new. Bundt Cakes are always a good option! You don’t need to decorate them like regular cakes, less hassle! I’m not very good at applying frosting, not even on cupcakes, you’ll probably won’t be seeing cupcakes on this baking blog…

Side note… There’s a funny scene in the movie My Big Fat Greek Wedding (2002), where Toula’s mother doesn’t know what a bundt cake is and she “fixes” the hole in the cake with a potted flower. Whenever I see a bundt cake it reminds me of this movie. If you haven’t seen it, you must!

You’ll need:

  • 3 Cups Of All Purpose Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 3 Sticks of Butter
  • 1 (8oz) Cream Cheese Package
  • 2 3/4 Granulated White Sugar
  • 2 1/2 Tsp Vanilla Extract
  • 6 Large Eggs

Preheat oven to 350°F. Place a rack in the center of the oven. Prepare your bundt pan by spreading butter and sprinkling flour all over.  Sift flour, baking powder, and baking soda in a large bowl, then salt. Now add, room temperature butter (you can soften it in the microwave) and cream cheese. Mix well until smooth and pour in the sugar, add vanilla, and eggs… Mix until batter is smooth. Bake for 60 minutes.

For the glaze…

You’ll need:

  • 2 1/2 Cups of Confectioner’s Sugar
  • 2 Tbsp of Milk
  • 1 Tsp Vanilla Extract

In your mixer, add the confectioner’s sugar, milk, and vanilla extrad. Mix until smooth.

No Yeast Pizza

Today, I made homemade pizza. After looking through many recipes online, I found a good one. You might think that homemade pizza is complicated… But not this recipe! This is super easy and it only took 30 minutes to make. It’s even better than frozen or delivery! Oh, and don’t worry about the ingredients they’re pretty basic, you probably have them in your pantry.

You’ll need:

  • 1 1/4 Cup Flour
  • 1 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 1/2 Tbsp Extra Virgin Olive Oil
  • 1/2 to 2/3 Cup Water
  • Marinara Sauce
  • Cheese

Instructions:

Preheat oven to 400°F. Pour flour, baking powder, salt in a large mixing bowl. Add olive oil and water, mix well. If the dough is too dry add some water (don’t exceed from the recommended amount), if the dough is still wet add a tiny bit of flour. Place your dough on a cutting board and stretch it with a rolling pin (I folded the edges a bit, to round it). Add marinara sauce and cheese to your liking and place in your oven for 20 minutes.

Peanut Butter Cookies

I made these cookies a while ago and they’re delicious! These are more like shortbread cookies but with a hint of peanut butter. You can taste the peanut butter (of course!) but it’s not overwhelming… they taste even better with a cold glass of milk.

You’ll need:

  • 1 Stick of Butter
  • 1/2 Cup Peanut Butter
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 1 egg
  • 1/2 Tsp Vanilla
  • 1 1/4 Cup Sifted Flour
  • 3/4 Tsp Baking Soda
  • 1/4 Tsp Salt

Instructions:

Preheat oven to 375°F.  Mix butter, peanut butter, brown sugar, sugar, egg, and vanilla. After mixing the first six ingredients, add the rest (Flour, Baking Soda, and Salt) and mix well. When the dough is ready, roll into balls and press down with a fork dipped in sugar. Place on a cookie sheet (non greased). I like to cover the cookie sheet with foil. Bake for 10-12 minutes.

Faux Fudge

Today, I made fudge for the first time. I’ve always wanted to learn how to make it and I found an easy recipe online. This took me about 20 minutes to make and then 2 hours for it to be ready.

You’ll need:

  • 1 Can Sweetened Condensed Milk
  • 1 12 oz Bag Semi Sweet Chocolate Chip
  • 1 6 oz Bag Milk Chocolate Chips
  • 1/2 Stick Butter
  • 1 Tsp Vanilla

Instructions:

In a saucepan, add condensed milk, chips, and butter. Cook on medium low heat, stirring quite often to prevent burning. After it melts, remove from heat, add vanilla, and stir. Cover a 10×10 pan in foil and grease with butter. Spread mixture on pan, smooth it out, and place in the refrigerator for 2 hours. When ready, remove the foil and cut the fudge in small pieces.
